Rabbit with Old Gueuze

Ingredients

  • 1 rabbit (cut in pieces) or 4 to 5 legs
  • 150 gr low fat bacon
  • 300 gr mushrooms
  • 2 small onions or 1 big one
  • 1 Old Gueuze Oud Beersel
  • flour ( ± 1 tablespoon)
  • olive oil
  • thyme and laurel

Cooking

  • cook the rabbit in olive oil and add salt and pepper
  • add the onion and flour
  • pour in Old Gueuze
  • add thyme and laurel
  • cook for 20 to 25 min.
  • add finely cut mushrooms and cooked bacon (to extract the salt)
  • cook for another ± 15 min.

Serve

  • with garden cress and croquettes or baked potatoes
